Special Recipes

Homemade Protein Bars 

With all of the school activities going on right now plus - football, soccer etc, I’ve found that having these on hand is a healthy way to stave off hunger until you make it home for a real meal. They keep well in the fridge and will freeze too. If you cut them and wrap them, you have on demand snacks!

Ingredients
Olive oil or other cold pressed oil
1 cup soy protein powder (or 2 tablespoons egg white powder)
1/2 cup unbleached all-purpose flour
2 cups rolled oats
1/2 cup bran (can be any cereal type)
1/2 teaspoon cinnamon (freshly ground when possible)
3/4 teaspoon salt
1/2 cup (packed) turbinado or brown sugar
1 cup semisweet chocolate chips or raisins (optional)
1 cup chopped  nuts or seeds (use any type you have on hand)
1-1/2 cups plain or vanilla yogurt (or apple sauce for non dairy)
1/8 cup maple syrup
1/4 cup cold pressed olive oil (or natural nut butter, softened)
2 teaspoons pure vanilla extract

Instructions
Preheat the oven to 350 degrees F (325 degrees F for a glass pan).Lightly wipe down a 9X13 pan with olive oil (put a small amount on a piece of wax paper or paper towel or use pump sprayer with oil) .
Mix together the protein powder, flour, oats, oat bran, cinnamon and nuts or seeds, and salt in a large bowl. Crumble in the brown sugar, rubbing it with your fingers to break up any clumps. Stir in the chocolate chips or raisins.
Measure the yogurt(or apple sauce), oil (or butters), syrup, and vanilla into a second bowl, stirring until well combined. Add the wet mixture to the dry, and mix patiently until thoroughly blended. (You may have to use your hands -- it will be a thick batter, verging on a dough.)
Transfer the mixture to the prepared pan, patting it evenly into place with your hands. Bake in the center of the oven for 15 minutes, then remove from the oven and cut into bars of any size or shape. Place the bars on the prepared baking tray and bake for another 15 minutes, or until golden around the edges. (For extra-crunchy bars, turn off the oven and leave them in there for up to 45 minutes longer.) Remove the bars from the oven, and place them on a rack to cool.

Yield: About 20 medium-sized bars
