Whether you are interested in learning basic culinary skills for adults or children or wish to learn a specialized cuisine,we can accommodate your needs. Classes can be taught in informal settings such as your home or workplace, or in more structured environments such as classrooms or teaching kitchens. Whether you prefer your class to be an interactive lesson or observational cooking where you enjoy being entertained with the culinary wit of Chef Channon, you will find that we can develop a class to suit your needs. |

My experience in teaching comes from both a formal educational background at the University of Windsor and hands on experience teaching for several groups. At the University of Windsor I obtained my Bachelor of Arts in 1989 and my Bachelor of Education in 1993. I was also the Public Education Coordinator for Canada Customs and Immigration for several years, teaching tax law to the public as well as staff. I began teaching culinary arts in 1994 through such private groups as the international historical society, SCA where you can find examples of articles I have written. Formal Personal Chef Training began with the Canadian Personal Chef Association, followed by several programs including Cordon Bleu in Montreal, Food Safe Training in both Canada and the United States and personal research in numerous health/ food issues. In addition I have taught public culinary programs with organizations such as Zehrs Community Rooms, a Teaching Kitchen in Windsor ON. I have also taught children within their own classrooms- developing the lessons based on the age and content requirements. Most Recently my teaching has taken me to private settings in the Southwest Michigan area as well as public teaching through the Portage Community Education Center and public forums such as the Portage Public Library. |

This program was developed to teach children the fundamentals of cooking. From kitchen and food safety to food science and preparing a gourmet dinner, children spend fun filled days working in the kitchen with an experienced teacher, chef and mother of three. |

Having an extensive background in culinary history, I have developed several one evening classes that teach a variety of cuisines. From the time of Imperial Rome throughout the Middle Ages and the Renaissance,from Ireland through the Middle East to Japan, the topics are almost endless. In addition, classes can be developed for you with your special needs. For one special luncheon, I researched and recreated a menu from “The White House Cookbook”, written in the 1890s by the Chef of the Lincoln household which was a family heirloom belonging to the hostess. We served a menu that was originally served in May, 1893 to a group of ladies who belonged to the American Women’s League. They were not only delighted, but they were able to enjoy a part of their own history in a very real way. |
